{"id":8,"date":"2009-01-21T23:23:02","date_gmt":"2009-01-22T06:23:02","guid":{"rendered":"http:\/\/www.meanboyfriend.com\/overdue\/?p=8"},"modified":"2020-03-22T02:44:04","modified_gmt":"2020-03-22T09:44:04","slug":"red-snapper-and-spicy-rice","status":"publish","type":"post","link":"http:\/\/www.meanboyfriend.com\/overdue\/2009\/01\/red-snapper-and-spicy-rice\/","title":{"rendered":"Red Snapper and Spicy Rice"},"content":{"rendered":"<div id=\"attachment_56\" style=\"width: 701px\" class=\"wp-caption alignnone\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-56\" class=\"size-full wp-image-56 \" title=\"Red Snapper with Spicy Rice\" src=\"http:\/\/www.meanboyfriend.com\/overdue\/wp-content\/uploads\/2009\/05\/snapper.jpg\" alt=\"Red Snapper with Spicy Couscous\" width=\"691\" height=\"460\" srcset=\"http:\/\/www.meanboyfriend.com\/overdue\/wp-content\/uploads\/2009\/05\/snapper.jpg 691w, http:\/\/www.meanboyfriend.com\/overdue\/wp-content\/uploads\/2009\/05\/snapper-300x199.jpg 300w\" sizes=\"auto, (max-width: 691px) 100vw, 691px\" \/><p id=\"caption-attachment-56\" class=\"wp-caption-text\">Red Snapper with Spicy Rice<\/p><\/div>\n<p>This is a variation on a Jamie Oliver recipe &#8211; I have to admit that I think the original is better than this variation (it&#8217;s in Jamie&#8217;s Dinners, called Omega 3 and Couscous if you are interested) &#8211; but we were missing some of the key ingredients, including the Couscous, so this is what we got instead (some of the quantities I&#8217;m guessing about)<\/p>\n<p>2 fillets of red snapper (although you could use another fish &#8211; barramundi would probably work well)<br \/>\nCherry Tomatoes (a small punnet &#8211; 125g I think)<br \/>\n1 Red Onion<br \/>\n1-2 tsp dried chilli<br \/>\n1 tsp fennel seeds<br \/>\n1 bay leaf (fresh is better &#8211; you can freeze them and use straight from the freezer)<br \/>\nBasmati rice (enough for 2 &#8211; I would say a cupful)<br \/>\n1 anchovy fillet<\/p>\n<p>Cook the rice leaving it just slightly underdone<\/p>\n<p>You want a pan that is going to fit everything in it &#8211; we use a deepish wide frying pan &#8211; ideally with a lid, although you could use foil to cover the pan as well.<\/p>\n<p>Chop the onion finely, and cook on a low heat in some good olive oil, with the fennel seeds, bay leaf and chilli in a covered pan (you want the onion to get quite soft &#8211; it will take 10 minutes or so)<br \/>\nChop the tomatoes into halves or quarters (depending on the size &#8211; you don&#8217;t want the pieces to be too small), and chop the anchovy as well, and add them both to the onion and herbs\/spices. Season the mixture to taste.<\/p>\n<p>Spread the tomato\/onion mixture over the base of the pan, then spread the rice over the top, covering the tomato\/onion completely. Lay the fish fillets, skin side up, on top of the rice, and cover the pan. Cook on a low heat until the fish is cooked through. You may well want to add a drop of water during the cooking &#8211; I usually end up adding half a cup or so.
